The story
Boutique Hotel Auberge Langenthal serves refined Swiss cooking in the center of Langenthal inside a protected 1870s merchant villa. Chef Andri Casanova and hostess Kathrin Spillmann took over the property in August 2019 following their successful tenure at Restaurant essen'z in Brugg. Their combined training at the Luzern hospitality school and years of professional experience across the region culminated in a 14-point Gault&Millau rating that recognizes their disciplined execution.
The kitchen favors short tasting formats that highlight precise technique and deliberate ingredient pairing. Crispy roasted white cabbage arrives alongside miso mayonnaise and a sharp barbecue glaze, while delicate tagliolini carry a confit egg yolk and pale truffle butter. Pacific tuna fillets receive an Asian treatment with glass noodles and wok vegetables, contrasting with tender calf steak served alongside feather kale and a rustic potato quiche. The kitchen applies this same structured philosophy to Swiss gastronomy, balancing rich regional produce with subtle international techniques. An extensive cellar focuses primarily on Swiss and European crus to match the menu.
The dining room occupies a heritage building that evolved from a classical fabric shop into a neo-baroque residence over two centuries. Antiquarian furniture sits quietly beside clean contemporary lines throughout the guest rooms and public spaces. The property operates as a practical workplace integration project for individuals navigating mental health challenges, a mission inherited from the original estate owners. Guests consistently note how the historic scale supports this quiet dedication to the Swiss kitchen.
