The story
Inside the KKL Luzern, directly on Lake Lucerne with views of the surrounding Alps, Lucile brings the scent of mountain meadows and the clarity of glacier crystals to the plate. The restaurant holds one Michelin star and a Michelin Green Star, recognition that reflects both the quality of the cooking and a deep commitment to sustainability.
Since May 2025, head chef Maximilian Huber leads the kitchen. His philosophy, “Mother Nature nurtures all growth,” centres on regionality and sustainable sourcing. He combines the precision of French cuisine with modern techniques such as fermentation, gentle smoking, and air-drying. “Everything in this world is finite,” he says, a motto he lives daily in his cooking. Before Lucide, Huber defended a Michelin star and a green star at a previous post and placed second in the 2023 “marmite youngster” competition.
The menu – titled “Dialogue of the Seasons” – changes with what is fresh, preserved, or matured. Dishes like Spaltenstein asparagus with elderflower and Maluns, or pikeperch Matsukasa-yaki with kohlrabi and kiwi, showcase alpine tradition reinterpreted with a contemporary, open-minded approach. A vegetarian menu runs alongside, featuring courses such as carrot with kimchi, buckwheat, and sea buckthorn.
Behind every ingredient is a named producer: Molki Stans for dairy, Enikerhof for vegetables, Holzen Fleisch for meat, and Fischzucht Bremgarten for fish, among others. The wine list focuses on Switzerland and the Alpine region, favouring organic, biodynamic, and family-run estates.
Restaurant manager Shamara Perera and the team welcome guests in a relaxed atmosphere where the connection between producer, chef, and diner is part of the experience. For Huber, hospitality is a “lived attitude,” and every meal is a dialogue – between the seasons, the land, and the people who bring it to the table.
