The tasting menu changes with the seasons. A recent five-course offering (CHF 165) and seven-course option (CHF 195) showcase Aebersold’s confident hand. One might begin with duck liver, rhubarb, and almond — a play of rich, tart, and nutty. Langoustine follows with kohlrabi and cucumber vinaigrette, light and bright. White asparagus, chorizo, and mussel foam bring a touch of smoke and ocean. Halibut appears with peas and tarragon, then lamb with morels and thyme. Dessert, a combination of Tomme Fleurette, Schlorzifladen, and hazelnut, or strawberry, lemon, and basil, closes the meal on a clean, sweet note.
