The story
In the heart of the Chablais region, Audrey Feutren-Halgand and Grégory Halgand run the restaurant of the Hôtel de Ville in Ollon. They took over the historic building in April 2022 and quickly earned a Michelin star for their gastronomic dining room.
The couple met in 2004 at the three-Michelin-starred Relais Bernard Loiseau in Burgundy. They worked together at Patrick Jeffroy's two-star kitchen in Brittany, then in Arles, Paris, and eventually Switzerland. Before opening their own place, Grégory earned his first Michelin star at the Chalet Royalp Hotel and Spa in Villars. The restaurant's Michelin star was awarded in 2023, and Gault&Millau named them the Romandie Discovery of the Year 2024.
Grégory, originally from Brittany, focuses on seafood and ocean products that are rare on local tables. His cooking is refined, creative, and built on seasonal ingredients from the region. Audrey, the pastry chef, reimagines classic desserts with a personal, modern touch. Together, they offer a cuisine that is both French and seasonal, rooted in the terroir of the Chablais.
The restaurant offers two distinct experiences. The gastronomic dining room serves the Michelin-starred menu, while the brasserie and terrace (open in good weather) provide simpler, hearty dishes. The building itself dates to 1781-1782, originally designed as a town hall with space for passing guests. Today, the arcades that once housed market stalls now hold the café and lounge.
The team describes their approach as a family story of passion and transmission. They aim to create emotion and memories around the table, working with respect for the product and a sense of detail. The result is a place where families, friends, and travelers share genuine moments in a warm atmosphere.
