He manages both the historic Grand Restaurant and the casual Kronenstübli as a unified team. This Swiss-Italian kitchen shifts its menu with the seasons, drawing directly from the high-altitude garden and the nearby Lago Bianco.

Seasonal plates and precise techniques

Thinly sliced brown trout from Lake Bianco arrives as a carpaccio dressed with raspberry vinaigrette and a matching jelly. Quail broth pours tableside over warm breast slices to finish the cooking instantly. Other staples include braised pork knuckle stuffed into Bottoni ravioli alongside aged Pontresina cheese, and an Engadin rack of lamb served with smoked eggplant and potato fondant.

The original dining room dates to 1872 within this protected Belle-Époque building.
