Roots and the kitchen

Hannes Reimann founded the cooperative behind St. Moritz's Laudinella in 1956, naming the venue after the lark in Rhaeto-Romanic. Today, Kitchen Director Philippe Bischoff guides the culinary program, steering the dining rooms toward a refined pan-Asian concept. The expansion project continues, yet the main house already delivers a focused menu where Japan, China, Thailand, Vietnam, and Malaysia intersect on the same plate.

Signature plates

The Crispy Salmon Salad brings together salmon, crispy pastry flakes, and Japanese mayonnaise. Fluffy dough wraps barbecue pork in the Char Siu Bao, while the Malay Rendang offers beef simmered in coconut milk, herbs, and spices. The meal concludes with Grüntee-Mochi, rice cakes stuffed with green tea ice cream. The kitchen rounds out the experience with dim sums, broths, and a range of teppanyaki dishes.

The dining room embraces a sober style that prioritizes comfort and clarity. Updates to the building have improved the environment, while a larger expansion project proceeds nearby. A greeting sign displaying "Please excuse the Chrüsi Müsi" marks the entrance, nodding to the character that has defined this community-owned venue since 1957.
