The story
In Taipei, Mountain and Sea House is a restaurant dedicated to reviving the depth and delicacy of traditional Taiwanese cuisine. While night market snacks offer a first impression of the island's food, this kitchen explores a more complex, rare culinary heritage. The team spent two years researching and redeveloping time-honored methods, consulting with retired master chefs to bring authentic, old-world Taiwanese flavors back to the table.
The restaurant's name reflects its commitment to local ingredients, sourced from its own Nan'ao Fengyuan Farm, which sits between mountains and sea. The farm supplies seasonal organic vegetables, while the kitchen uses Taiwan Black Pig, an indigenous breed, and local free-range mountain chicken. This farm-to-table philosophy means the culinary process begins at the origin of the food.
The menu features classical gourmet dishes that highlight these ingredients. The Sugarcane-smoked Free-range Chicken uses indigenous chicken and a traditional smoking method for a refreshing, sweet taste and chewy texture. The Hakka Braised Streaky Pork, a festival favorite, sees pork belly stewed with shredded bamboo shoots. Another signature is the M&S Special Fish, an elaborate pot filled with boneless fish, mushrooms, dried shrimp, leek, and clams, combining old flavors. A simple Steamed Organic Seasonal Potager brings seven to eight vegetables from the farm, finished with fleur de sel and rose-petal-infused oil.
Housed in a building that evokes the romantic style of the Japanese Meiji Taisho period, the interior features furniture from the 1930s, Japanese Aritayaki porcelain, and French LEGLE dining ware. The restaurant earned a Michelin star for its high-quality cooking, a recognition that underscores its success in preserving and presenting the true taste of authentic Taiwanese cuisine.
