The story
Peng Cheng Tang is a Taichung outpost of Chun Shui Tang, the tea house that changed Taiwanese drinking culture forever. Founded in 1983 by Mr. Liu, Han-Chieh, the original Siwei Street store in Taichung introduced the island’s first cup of cold tea — foam black tea — by shaking traditional hot tea with ice in a cocktail shaker. Four years later, in 1987, the team added tapioca pearls to milk tea, creating the world’s first bubble tea. That spirit of innovation earned this branch a Michelin Bib Gourmand in 2026, recognising its good-quality, good-value cooking.
Chun Shui Tang describes itself as a “humanistic tea house” — a place where tea is treated with the reverence it deserves. The name itself evokes spring water, long considered by connoisseurs as the finest for steeping leaves. At Peng Cheng Tang, that philosophy translates into rigorous standards. Tea leaves are selected by the season and batch, ensuring each cup holds its character even when served cold. The signature bubble tea uses pearls made from tapioca starch, kept refrigerated throughout delivery to preserve their tender, just-cooked texture. Every drink is built to a precise ratio: a 4.5-centimetre layer of fine foam and crushed ice sits atop a bold, sweet tea base.
While the drinks draw the crowds, the food menu at Peng Cheng Tang is equally thoughtful. Classic Taiwanese dishes are prepared with care: braised beef noodle soup with a rich, aromatic broth and tender tendon; kung-fu noodles tossed in a savoury minced meat sauce; and golden crispy chicken made from marinated thigh meat, fried until the crust shatters. The signature braised bean curd and rice cake, simmered in a house-blend soy sauce, is a favourite. For those seeking something lighter, the turnip cake is pan-fried on the spot to a crisp exterior with a soft, tender interior.
The Michelin Bib Gourmand nod is no accident. Peng Cheng Tang maintains the same exacting standards that made Chun Shui Tang a household name across Taiwan, Japan, and Hong Kong. From the original leaf tea to the hand-stirred sugarcane syrup, every ingredient is chosen to deliver a consistent, satisfying experience. Whether you come for a bowl of noodles or the drink that started a global craze, this Taichung branch offers a genuine taste of Taiwanese tea culture — no hype, just good tea and honest food.
