The story
In a quiet corner of Bangkok’s Dusit district, Chim by Siam Wisdom occupies a vintage colonial house wrapped in greenery. Here, chef Thaninthorn “Noom” Juntharawan translates his deep knowledge of Thai culinary traditions into a fine-dining experience that has earned a Michelin star for seven consecutive years.
Chef Noom’s path to this kitchen began in the UK, where he trained at renowned restaurants such as Zuma, Sketch, and Gordon Ramsay. After winning Iron Chef Thailand and judging on Kitchen Wars, he returned to his roots, opening Chim by Siam Wisdom in 2018. His philosophy is clear: “We promise to keep our ethos of delivering authentic Thai flavours in a fine dining setting.”
The restaurant’s “Wisdom House” concept is inspired by “The Nature of Siam.” It draws on seasonal ingredients from across Thailand and traditional techniques like fermenting, pickling, and preserving. The menu balances the simplicity of local home cooking with the refinement of royal Thai gastronomy. Each dish reflects its origin, the rhythm of the seasons, and culinary wisdom passed down through generations.
The current winter tasting set, “Celebration of Rattanakosin Common Era 1982,” pays homage to the bicentennial of Bangkok’s founding. Dishes include a gently seasoned pork terrine set into a smooth jelly, Narathiwat-style sticky rice–stuffed squid with palm sugar, and a revived noble-style tom yum with smoked redtail catfish. The meal culminates in a samrub — a family-style spread of Thai dishes served with jasmine rice, a true reflection of shared dining culture.
The setting — a colonial-era house filled with abundant greenery — invites guests to relax and savour their meal. Lunch and dinner are served by reservation only, with a warm, elegant ambiance that complements the intricate flavours on the plate. Whether indoors with air conditioning or on the outdoor terrace, the experience feels both intimate and grounded in Thai heritage.
