And for a vegetable dish, yod liang pad kai (melinjo leaves fried with egg) brings a chewy, nutty texture that’s rare to find in Bangkok.
Other standouts include sataw pad kapi goong (stink beans with shrimp and shrimp paste), heavy on the umami, and pla krabok tod kamin (fried mullet with turmeric). The fish itself may be a touch dry, but the accompanying sauce—vinegary, garlicky, and spicy—is unforgettable.
For a sweet finish, buad khao pod (corn and taro in coconut milk) is creamy and comforting.
