"Juksunchae" (죽순채) means bamboo shoot — a symbol of purity, resilience, and quiet elegance. At this intimate Bangkok restaurant, that spirit guides every detail, from the kitchen philosophy to the welcome at the door.

Located in Sukhumvit 49, Juksunchae is Thailand's first contemporary Korean fine dining restaurant. With only twelve seats per night, each evening is an intentionally crafted experience. The space, the rhythm of the meal, and the food itself all reflect a deep respect for Korean culinary heritage, reimagined through a modern lens.

Executive Chef Henry Lee was the first chef in Thailand to take the risk of reimagining Korean cuisine at a fine dining level. He challenges expectations, presenting Korean food with depth, elegance, and cultural richness in a way not seen before. The kitchen explores the intersection of tradition and innovation, with a mission to honor the legacy of Korean cuisine while crafting something new.

The seasonal tasting menu evolves every three to six months, shaped by ingredient availability and fermentation cycles. It runs eleven courses. For those seeking a more expansive experience, the Caviar Signature Tasting Menu adds twelve courses including signature dishes such as Uni Bibimbap, supplemented with caviar and a bottle of Champagne. Wine pairings are offered in five- or eight-glass options, the latter occasionally including sake, liqueur, or digestives.

Sustainability is woven into the operation. Juksunchae prioritizes seasonal, local, and responsibly farmed ingredients, working with small producers in Chiang Mai and Chiang Rai. The kitchen reduces single-use plastics, minimizes food waste, and selects wines from biodynamic and sustainable vineyards. Even the kitchen design and service ware reflect a commitment to longevity and reuse.

This dedication to quality and integrity has earned Juksunchae a Michelin star in 2026, recognizing high-quality cooking in a setting that feels both refined and welcoming. The restaurant's contemporary Korean cuisine offers a rare glimpse into a culinary tradition presented with boldness and care.
