A Story on Every Plate

Khaan Bangkok, led by chef Sujira “Aom” Pongmorn, reimagines Thai street food and regional classics as refined, story-driven tasting menus. The restaurant has earned a Michelin Recommended spot in the 2026 guide, a recognition that aligns with its mission to honor Thailand’s culinary heritage through contemporary technique.

Chef Aom, Thailand’s first recipient of the MICHELIN Guide Young Chef Award, curates each menu as a narrative. Travel + Leisure described her 11-course journey as “opening a gilded book of Thai history,” where dishes reflect culture, migration, and memory. One example is goong chae nam pla, reimagined with fermented northern Thai soybeans for deeper umami. Another signature pairs roasted duck red curry with pineapple, cinnamon-braised pear, and apple mille-feuille — a nod to Bangkok’s historic trading quarters where Thai and Chinese influences intertwined.

Rooted in Place

The kitchen works closely with farmers, fishermen, and small producers across Thailand. Ingredients are sourced for both flavor and cultural significance, supporting local communities while ensuring seasonality. This hyper-local approach extends to Khaan’s zero-waste philosophy: trimmings and peels are repurposed into sauces, broths, and desserts.

The intimate dining room on Soi Somkid seats just 18 guests, offering a focused, unhurried experience. The tasting menu evolves with the seasons and is available in vegetarian and vegan versions, with wine, tea, and juice pairings curated to complement each course.

A Culinary Ambassador

Chef Aom’s influence extends beyond the restaurant. She was named to Tatler Asia’s Gen.T List 2025 and has represented Thai cuisine at events such as the World Gourmet Festival. Her KHAAN on Tour initiative travels to rural communities — like an Akha hill tribe village in Chiang Rai — to learn from elders and bring forgotten ingredients and techniques back to the Bangkok tasting menu.

At Khaan, Thai contemporary cuisine is not about reinvention for its own sake. It is about listening to history, honoring regional wisdom, and translating familiar flavors into refined expressions that resonate today.
