The story
Resonance is a casual fine dining restaurant in Bangkok’s Phra Khanong district. At its heart is Japanese-born chef Shunsuke Shimomura, whose cooking follows what he calls “Boundless Cuisine” – a concept that draws on his training in Italy, France and Australia, then filters those influences through a lens of pure, subtle flavours.
Shimomura’s path began with memories of his father cooking for him. That led to culinary school and stages at multiple Michelin-starred kitchens, then to posts in Italy and France. It was at Melbourne’s Amaru that his style fully matured: deep respect for ingredients and a focus on revealing, rather than masking, their character.
Resonance’s menu changes seasonally and is served as a choice of tasting menus – from a 10-course weekday experience to a 14-course Signature Journey. The kitchen presents contemporary Asian-centric dishes that are precise and beautifully executed. A seven-glass wine or tea pairing is available to complement each course.
In early 2024, Resonance was awarded a Michelin star. The Michelin Guide praised Shimomura for taking diners “on a journey through his past, weaving dishes from his experience working around the world into his precise seasonal tasting menu.” The restaurant has also been named one of the top 25 in Bangkok by local media, and publications such as Travel+Leisure Asia, Prestige Hong Kong and BK Magazine have highlighted its confident, playful approach to modern cuisine.
Resonance serves dinner Tuesday to Saturday, with lunch on Friday and Saturday. The atmosphere is intimate and welcoming – a place where the chef’s global path meets the purest expression of each ingredient.
