The story
High above the city on the 25th floor of Siam@Siam Design Hotel, TAAN offers a perspective on Thai contemporary cuisine that is both grounded and adventurous. Chef Monthep “Thep” Kamolsilp and his team work directly with independent farmers and food artisans across Thailand, sourcing seasonal, 100% local ingredients that dictate the menu’s direction.
This farmer-led approach is at the heart of TAAN’s identity. The restaurant’s name plays on “pra-taan” – leader or head of a group – and every dish is designed to tell the story of the people who grow, catch, or forage the produce. The philosophy was cemented after a visit to the Hin Lad forest in Chiang Rai, where Chef Thep saw the sustainable ways of the Pga K’nyau tribe. His own culinary background in French kitchens gave him the technique to push Thai flavours into new territory.
TAAN’s commitment to ingredient-driven cooking earned it a place in the Michelin Guide Bangkok, Recommended in 2026. The menu changes with the seasons; the current “Ayutthaya” tasting menu explores the historical trade and cultural exchange that shaped Thailand’s gastronomy. Diners can choose between 13-Harvest, 9-Bloom, or 5-Seed courses, each a careful progression of flavours. A separate vegetarian menu also highlights the richness of plant-based Thai cooking, using the same meticulous sourcing.
Chef Thep’s creativity shines in limited-time offerings. His version of khao chae – a classic Thai summer dish of rice soaked in fragrant water – arrives with a series of bold condiments: lacto-fermented lychee, smoked oyster from Surat Thani, and lobster stuffed in burnt chili wrapped in egg net. The restaurant also hosts a Chef’s Table series, inviting peers like Chef Weerawat “Num” Triyasenawat of Samuay & Sons to spotlight rare Isan ingredients in collaborative dinners.
TAAN is open nightly for dinner, serving modern Thai cuisine that honours tradition without being bound by it. Whether through the main tasting menus or a glass of biodynamic wine from its curated list, the experience feels personal and purposeful – a true reflection of the land it celebrates.
