The story
At Aquila, meaning "eagle" in Italian, Chef Phubase Chuprakong has built a restaurant that defies easy categorisation. The menu is roughly 80% original creations, marrying Italian techniques with Asian influences and a deep reliance on seasonal, locally sourced Thai ingredients. The result is bold, vibrant flavours that are rich without being overwhelming – a philosophy summed up in the restaurant's slogan: "Eat Good, Feel Good."
Chef Phubase studied commercial cookery in Melbourne, Australia, and brings over twenty years of experience from leading kitchens and five-star hotels across Thailand and abroad. After more than a decade living in Chiang Mai, he opened Aquila in August 2021 as both chef and owner. His cooking specialises in innovative Italian cuisine with a Thai and Asian twist, always prioritising local produce and original dishes that offer something new to both Thai and international guests.
Aquila's exclusives include Wagyu Burrata Gnocchi, Snow Fish in Fish Broth, Oyster & Beef with White Truffle Ponzu Sauce, Squid Fettuccine with Spicy Sesame Shoyu, and the Aquila Pork Chop.
