Located within the InterContinental Phuket Resort on Kamala Beach, this Michelin-recommended restaurant is a pioneer in sustainable gastronomy. Here, every dish tells a story of tradition and innovation, rooted in a philosophy the team calls “habitat-conscious” and “ecologically-pure.”
The kitchen, led by Outlet Chef Chalermwut Srivorakul (Nui) – Stella Awards 2024 Chef of the Year – reinterprets the region’s rich culinary heritage with contemporary finesse. Fragrant spices, local herbs, and fresh ingredients are sourced from up to 17 farms across Thailand, including Katian Farm in Phang Nga province. The restaurant’s zero-waste ethos is tangible: an Oklin Food Waste Composter transforms 2,500 kilograms of food scraps per month into nutrient-rich fertiliser, which is returned to partner farms and local communities.
The nine-course Sustainable Tasting Menu embodies this hyper-local, closed-loop approach. A signature dish reimagines Kanom Jean, a classic rice noodle dish, using invasive blackchin tilapia. The fish is prepared head-to-tail-fin: the flesh becomes delicate noodles, the bones are ground into powder, and the scales and skin are crisped. Other signature creations – like Miang Pla featuring local catfish and Phuket Curry with water mimosa – celebrate the island’s ingredients with a refreshing, contemporary touch.
Dinner is served daily from 18:00 hours, with a la carte options available from noon. The restaurant is air-conditioned and fully wheelchair accessible, with parking on site. Jaras’s recognition by the Michelin guide underscores its place as a destination for diners seeking Thai contemporary cuisine that is as thoughtful as it is delicious.
