The story

PRU – Phuket’s First Michelin-Starred Restaurant with Community-to-Fork Tasting Menus

The Philosophy

PRU is the first and only restaurant in Phuket to hold a Michelin star, and it also carries a Michelin Green Star for its sustainable approach. Executive Chef and co-owner Jimmy Ophorst describes the ethos as “community-to-fork”: a network of farmers, fishermen, and artisanal producers across Thailand who supply ingredients that even many locals may not know. From Makwaen peppercorns harvested in southern forests to the unexpected elegance of the King of Fruits transformed into a mousse, each component has a story.

The Experience

PRU does not offer à la carte dining. Instead, guests place their trust in the kitchen and enjoy a thoughtfully paced tasting journey. The seasonal PRU Experience unfolds as a complete culinary narrative, while the Lunch Experience offers a lighter, carte blanche curation that changes with the seasons. For those seeking a plant-based option, the bespoke Gaia menu is entirely ovo-lacto vegetarian. The kitchen is guided by ingredient integrity, with a strong focus on responsibly sourced seafood and modern interpretations of Thai flavours.

The Space

The traditional wall between kitchen and dining room has been intentionally dissolved. The restaurant, set within the grounds of the Trisara resort, features an open theater kitchen with panoramic ocean views. The design is inspired by kappo – the Japanese style where the chef is present, focused, and cooking directly in front of you. Ten counter seats offer the most intimate view of the action, while the main dining room provides more space. For private events, The Reserve is a modern wine cave housing over 200 premium and rare wines.

The Ingredients

PRU’s commitment to community extends beyond the plate. All courses are served on ceramics handcrafted by InClay Studio in Chiang Mai, and utensils are produced by local Thai artisans. The restaurant’s lounge chairs, tiles, and artwork all highlight community-crafted products. This “inside-out” approach brings guests closer to the best of Thailand – not just through taste, but through sight, smell, and the story behind every leaf, spice, and seafood catch.
