The story

Madam Despina: A Historic Meyhane in Istanbul’s Kurtuluş

The founder and the kitchen

Madam Despina brings a historic meyhane presence to Istanbul’s Kurtuluş district under the direction of Despina Kanlı, recognised as Turkey’s first female tavern owner. She established the venue to honour the local rhythm while developing a distinctive approach to traditional tavern cuisine. The kitchen applies that same discipline to every plate, a standard that recently drew recognition from Gault & Millau.

Standout plates

The kitchen prepares slow cooked staples with careful timing and minimal interference. The rum pilaki arrives steaming and keeps a creamy consistency until the last spoonful. Grilled liver draws consistent praise from regulars who value the precise sear and straightforward seasoning. These dishes anchor the menu without relying on complex modifications.

The dining room

Structural elements from the original building frame the seating area, leaving clear traces of the founder’s working years. Light wood paneling and practical furnishings direct attention toward the shared plates. The layout accommodates long conversations while maintaining comfortable sightlines between tables. Visitors notice the quiet efficiency immediately.
