The story

Hacı Abdullah Lokantası: Ottoman Heritage and Turkish Cooking in Istanbul

Origins and Legacy

Hacı Abdullah Lokantası anchors a culinary lineage that began in 1888 when the founder received an operating license from Sultan II. Abdülhamit Han. The establishment started at the Karaköy docks as Abdullah Efendi, rooted in the values of the Ahilik guild system that emphasized craftsmanship and ethical service. Over more than a dozen decades, the kitchen has operated on a strict master-to-apprentice transmission model, ensuring that preparation methods remain unchanged. Current partners including Hacı Mehmet Gülen, Hacı Abdullah Korun, Hacı Fahri Gündüz, and Hacı Rasim Akcan oversee operations, keeping the original vision alive within the Beyoğlu district.

The Kitchen and Menu

The menu reflects a deep commitment to traditional Turkish cooking, presenting dishes that balance household warmth with the structure of Ottoman palace cuisine. Core offerings include haşlama, a slow-braised meat specialty, alongside a rotating selection of olive oil dishes prepared with seasonal vegetables. Diners navigate a broad catalog that spans various soups, grilled meats, and pilafs accompanied by regional böreks. The service concludes with a dedicated range of desserts and traditional fruit compotes, maintaining the full arc of a classic Turkish meal. This preservation of authentic flavor profiles contributed to the restaurant earning a Gault&Millau score of 11.5 in 2026.

Salon Rooms and Ambiance

The dining space is divided into four distinct salons, each designed to recall specific elements of Ottoman architecture and decor. The Bab-ı Humayun Salonu provides an environment of imperial scale, intended for guests seeking a sense of grandeur. In contrast, the Matbah-ı Amire Salonu focuses on the precision of the culinary process, echoing the layout of a historic royal kitchen. The Lalezar Salonu utilizes traditional decorative patterns to create a refined setting for smaller gatherings. Finally, the Kubbealtı Salonu draws inspiration from the Çintemani motif, offering a vaulted atmosphere that frames special occasions with historical weight.
