Owner-chef Shunichi Horikoshi draws on 45 years of accumulated recipes to shape Itsumi’s original taste, introducing Turkish guests to Japanese culinary culture. The kitchen team includes head chefs Taketo Kitami, Atsushi Okubo and Junichi Hiraga, who work with fresh ingredients to prepare authentic Japanese dishes.
The Levent branch, located at İşkuleleri Kule 2, combines a modern, minimalist setting with traditional Japanese flavours. Guests describe it as one of the city’s most consistent addresses for sushi, with regulars noting the same freshness and quality across years. The restaurant offers both lunch and dinner service, with outdoor seating available.
Itsumi SO Etiler presents a more refined environment, described as elegant and chic, where traditional Japanese cuisine is served in a contemporary space. The Bodrum location by the sea offers a seasonal menu, allowing diners to enjoy Japanese food against a backdrop of turquoise waters.
