A restaurant inside a 300-year-old bathhouse

Lokanta 1741 occupies a setting few can match: the space between two domes of the Cağaloğlu Hammam, the last baroque hamam in Istanbul that has preserved its original texture for three centuries. The restaurant remains faithful to its roots, offering flavours that nod to the hammam’s history—olives feature prominently, a tribute to the olive seeds that once fuelled the bathhouse fires.

Chef Durukan Özgen leads the kitchen, crafting a menu that the restaurant describes as “contemporary Turkish cuisine.” Each dish combines traditional, universal and innovative cooking techniques. The menu draws on the eating and drinking habits of the diverse communities that have lived together on these lands for centuries, presented as both à la carte and tasting menus. The restaurant’s sole purpose, they say, is to crown special moments with sincere, sophisticated Turkish cuisine.
