The story
Since opening its doors in 2017, Mürver has established itself as Istanbul’s first live fire restaurant. The concept is refreshingly direct: use the best local and seasonal ingredients, cook over wood, charcoal, nut shells and aromatic plants, and let the flavours speak for themselves. The team dry-ages its own meat and fish, and makes ingredients like sucuk, cured beef and pickles in-house. The result is a style of contemporary Turkish cuisine that is honest, straightforward and, above all, tasty.
Head Chef Mevlüt Özkaya leads the kitchen with an unwavering focus on live fire. Inspired by the deep culinary heritage of Anatolia, he updates the dinner menu with the rhythm of the seasons, always aiming to bring the best out of local produce. Behind the scenes, chef and entrepreneur Mehmet Gürs has guided Mürver since day one, driven by the wish to create a truly Istanbulite restaurant built around good food and live fire.
The experience extends beyond the plate. Mürver’s large terrace, home to both the restaurant and the bar, offers unbeatable views of the Bosphorus and Istanbul’s historic peninsula. The wine list is carefully curated with a contemporary approach that champions local producers and indigenous varietals. This thoughtful combination of setting, service and skill has earned the restaurant a place in the Michelin Guide, recommended for its distinctive approach to Turkish grill and live-fire cooking.
