The story

Pandeli Restaurant Istanbul | Classic Turkish Cuisine in the Spice Bazaar

A Taste of Istanbul’s History

In 1901, Pandeli Çobanoğlu opened a restaurant with a simple conviction: “the beautiful rose only blooms in the soil it loves.” That soil is Turkey, and Pandeli has spent over a century showcasing the country’s authentic flavors within the bustling heart of the Spice Bazaar in Eminönü.

Step inside and you are greeted by walls of luminous blue tiles—the setting is transportive. The same small windows that framed views of Istanbul for Mustafa Kemal Atatürk, Queen Elizabeth II, and Audrey Hepburn now frame the city for today’s diners. This is a place where the city’s changing colors meet a steadfast tradition, and where Turkish cuisine is presented with the quiet confidence of a kitchen that has been perfecting it for generations.

Guided by Recognition

Pandeli’s commitment to good cooking that also offers good value has earned it a Michelin Bib Gourmand distinction—a nod to the kind of authentic, high-quality experience that has kept locals and travelers returning for decades. There are no gimmicks here, only plates that speak for themselves.

The menu is a walk through Turkish culinary heritage, from mezes that burst with seasonal produce to slow-cooked mains that carry the spice of the bazaar outside. While the specific dishes change with tradition and season, the philosophy does not: every recipe belongs to this soil.

The Atmosphere

The restaurant occupies the upper floor of the Spice Bazaar’s historic entrance—Balık Pazarı Kapısı. Its intimate dining room, cooled by air conditioning and lit by the blue glow of its famous tiles, feels both grand and welcoming. Service is attentive without formality, and the sense of history is palpable without being stuffy. Private parties and catered events are also accommodated.

Pandeli does not accept walk-ins for just tea or sweets; it is a proper dining destination, and reservations are best made well in advance. For a meal that tastes of old Istanbul—earthy, elegant, and entirely Turkish—Pandeli remains one of the city’s enduring treasures.
