Seraf Mahmutbey, founded in 2015 by Doğan Yıldırım, is a restaurant built on a singular conviction: that Anatolia’s millennia-old culinary memory deserves to be seen and tasted today. What began as a vision has become a living archive of regional recipes, local ingredients, and artisanal techniques. The kitchen is not merely a place of preparation but a repository of flavors passed down from the Hittites to the Ottomans, reinterpreted with clarity and respect.
Chef Sinem Özler came to Seraf from advertising, first as general manager. Encouraged by Yıldırım, she stepped into the kitchen without a formal culinary background, learning production processes firsthand. Her approach is grounded in field research: she travels across Anatolia, visiting home kitchens, learning from mothers and women producers, and sourcing ingredients at harvest time. This direct connection to the land and its people defines every plate.
At Seraf Mahmutbey, the menu changes with the seasons, guided by what local growers provide. Ingredients are chosen not just for quality but for the story they carry—wheat from a specific village, cheese from a women’s cooperative, herbs foraged in the mountains. Traditional preservation methods reduce waste, and forgotten recipes are brought back to life without folkloric theatrics. The result is Turkish cuisine that feels both ancient and contemporary: honest, labor-intensive, and deeply tied to its geography.
This commitment has earned Seraf a place in the Michelin Guide’s recommended list since 2022, a distinction it continues to hold. Chef Özler received The Best Chef’s One Knife Award in 2025, and Seraf Vadi—the sibling restaurant—has been awarded three toques by Gault&Millau. But the truest measure of success, for the team, is the trust of the women farmers and artisans who supply their kitchen year after year.
