The story
Perched in Kuzguncuk, overlooking the Bosphorus, telezzüz is Turkey’s first plant-based fine dining restaurant. Its name, meaning “to taste with all senses,” signals an approach that is at once simple, natural, and attentive. The kitchen works with a clear ethos: to show that a cuisine respectful of nature is not only possible but deeply rewarding.
The menu changes with the seasons, drawing on produce from the restaurant’s own vegetable garden. Every recipe begins with locally sourced ingredients, their textures and flavours allowed to speak. telezzüz’s commitment to sustainability and zero waste has earned it a Michelin Green Star, alongside a Michelin Recommended distinction for 2026. The Gault & Millau guide has also awarded it two toques and a “Chef’s Table” mention, plus a Best Sustainability Award.
