The chefs and the kitchen

Aperta in La Rochelle operates as a focused bistro serving small plates rooted in regional technique. Founders Olivia Duff and Anne Drillaud returned to their hometown after managing kitchens across the Bordeaux area. They brought François Durand into the cooking line, drawing on his previous tenure at Le Grand Hôtel. Le Fooding recognized the project earlier this year when they listed the venue among their curated selections. The team builds a streamlined menu around shareable portions that shift with seasonal availability. Their method prioritizes clean seasoning over heavy sauces, allowing each component to read clearly on the plate.

Standout dishes and techniques

The kitchen relies on direct heat and straightforward layering to build flavor. Roasted corn and fresh cilantro fold into a smooth hummus served beside warm pita bread. Grilled Padrón peppers receive a quick brush of maple syrup and garlic oil on the plancha before leaving the pass. Slow cooked baby back ribs rest for twelve hours until tender, then arrive with a batch of house made ketchup. A light cheesecake closes the service with lemon honey cream, garden apricots, tarragon shoots, and crushed pistachios beneath a crisp sugar lattice.

Room and atmosphere

The dining space combines raw wood, polished cement, and glossy floor tiles to ground the casual service. An open terrace faces directly toward the municipal covered market. Guests frequently claim the outdoor tables to watch the morning vendors arrange their displays while sipping wine. The floor plan keeps sightlines open between the kitchen pass and the seating area, reinforcing the relaxed rhythm of the neighbourhood bistro.

Open up! After exiling themselves to the Bordeaux area, friends Olivia Duff (a former graphic designer) and Anne Drillaud (who used to work at Le Grand Hôtel) have returned to their hometown of La Rochelle to unveil Aperta, a wooden-cemented-tiled bistro with plenty of tricks up its sleeve. In the kitchen you’ll find chef François Durand, who also used to work at Le Grand Hôtel in Bordaeux, brilliantly throwing together a selection of small plates. The night we went, seated on the terrace with views of the covered market, we devoured all of the following: incredible hummus with roasted corn and cilantro, scooped up with some good pita bread; the boss’s Padrón peppers, grilled on the plancha before being painted with maple syrup and garlic oil; tender baby back ribs slow-cooked for 12 hours, served with homemade ketchup for dipping; and to round out the meal, a summery cheesecake made with honey- and lemon-infused cream cheese, apricots from the garden, tarragon shoots, crushed pistachios and a crispy angel hair topping – a real flavor bomb of a dessert! // Louise Delange
