The restaurant is the fine-dining arm of Museum Hotel, Cappadocia's only Relais & Châteaux property, and its philosophy is built on a deep respect for the region's agricultural heritage.

The menu is a contemporary interpretation of Cappadocian country cooking, drawing on ingredients grown in the hotel's own 400-dönüm eco-gardens and sourced from local producers who share the same "preserve the locals" ethos. Forgotten flavors—like the rare Topaç garlic, now listed in the Slow Food Ark of Taste, and the heritage Alyanak wheat, revived for the breads and pastries served daily—are given a second life. The result is a cuisine that feels both timeless and quietly innovative.

Executive Chef Saygın Sesli, honored with the Relais & Châteaux Rising Chef Award in 2023, leads the kitchen. Alongside Creative Culinary Director Tolga Tosun, he reinterprets Anatolia's culinary memory with a light, contemporary touch. Every plate is a quiet tribute to the land, from the fresh greens and aromatic herbs of the valleys to the walnuts, almonds, and artichokes that mark the seasons.

The setting is equally compelling. Cavo, a restored historic cave within the restaurant, houses a curated wine collection featuring some of Anatolia's most accomplished producers.
