The story
Seten is the realization of a vision that began with Ali Yavuz, a local who transformed his family home into the Kelebek Cave Hotel in the early 1990s. His philosophy was never about building something new, but about preserving what already existed. Over time, this approach expanded into a broader hospitality vision, yet one essential piece was missing: the true cuisine of Cappadocia. Seten was born in May 2010 to fill that absence—not as just another restaurant, but to complete a cultural experience.
The name “Seten” refers to the traditional stone mill used in Anatolia to grind wheat, a symbol of slow, natural, and deeply rooted heritage. The restaurant itself is carved into stone spaces with arched structures that reflect the region’s traditional character. This is not a constructed atmosphere; it is a preserved past.
Seten’s cuisine does not follow trends—it preserves origins. Each dish reflects centuries of Anatolian and Turkish culinary tradition. The menu changes daily, with local women of Göreme preparing specialties such as Yaprak Sarma (stuffed grape leaves), Çiçek dolması (stuffed pumpkin blossoms), flatbread, soups, and baked okra—all cooked over an open fire, in a tandır (tandoori), or on traditional low wooden tables. In the evenings, the kitchen also offers traditional grilled items. The philosophy is simple: not to cook fast, but to cook right.
The restaurant’s wine program is equally rooted in the land. Seten’s own wine cave cellar, an original cave room once used to press grapes, continues this tradition. Their selection includes a Seten Chardonnay shaped by mineral-rich volcanic soils and a bold Cabernet Sauvignon–Syrah blend, both crafted to pair with the richness of Anatolian cuisine.
Seten has been recognized in the Michelin Guide 2026 selection, a milestone that reflects consistency, authenticity, and a deep respect for culinary heritage. As the restaurant states, this distinction acknowledges a kitchen rooted in tradition, shaped by time, and executed with discipline.
Located on top of Göreme, the restaurant offers views of the town and valleys. They do not take reservations—guests are welcomed as they arrive, and for the best experience, arriving before sunset is recommended.
