The story
Among the olive groves of Urla, Teruar Urla is a place shaped by listening to the land. The name itself signals the philosophy: “teruar” is the local expression of terroir, and here it means cooking in harmony with the earth and air. The restaurant earned a Michelin star in 2026 for its high-quality cooking, a recognition that reflects the integrity of the project.
Chef and co-founder Osman Serdaroğlu trained at ALMA – La Scuola Internazionale di Cucina Italiana, then spent years in Southern Italy working alongside two 2-Michelin-starred chefs: Gennaro Esposito at Torre del Saracino and Pino Cuttaia at La Madia. That experience shaped his approach to Mediterranean cuisine, which he now interprets through the prism of western Turkey’s landscape. The result is a style that draws from both French and Mediterranean traditions, but never strays far from what the Aegean soil provides.
Ezgi Serdaroğlu, his partner and co-founder, oversees the experience beyond the plate – from brand and interior design to the hotel rooms and service. Together they run a small ecosystem: a restaurant, a laboratory for experimentation, and a handful of rooms where guests can extend their stay.
The menu offers a tasting, a vegetarian tasting, and à la carte options. Exact dishes change with the season, because the kitchen works with what the land offers. The laboratory is where ideas are tested and techniques refined, always with the goal of letting ingredients speak in their purest form. The atmosphere is unhurried, and the connection to the place is felt in every detail – from the light falling through the windows to the wine list, which is worth exploring.
Teruar Urla is not about spectacle. It is about respect for a specific geography, transformed through hard work and shared with quiet joy. That is what the Michelin star recognizes, and what keeps guests returning.
