The restaurant is the creation of founder and "Chief Soul Kitchen Officer," Stasha, who was driven by a desire for an edible piece of her heritage. The name itself nods to the concept of the soul's weight, while the 21st parallel is the latitude of the Balkan Peninsula. The result is a space that feels like stepping into a friend's home—warm, familiar, and full of life, where morning light pours through the windows and the aroma of freshly baked bread fills the air.
The kitchen at 21 Grams is rooted in family recipes and inspired by the diverse cultures of the Balkan Peninsula. All dishes and pastries are hand-made by a Balkan-native team, using seasonal, locally sourced ingredients whenever possible. The menu is a celebration of tradition, with bold, layered flavors that honor the land and the people behind the food.
The food is divided into sections that encourage lingering. Breakfast is served all day, with comforting options like the Balkan Benedict with poached eggs and creamy spinach on homemade buhtla bread, or the Komplet Egg with sunny-side-up eggs, cheese, and beef jus. The claim-to-fame phyllo pies, baked straight out of the oven, come in varieties like goat cheese with honey and thyme, or creamy spinach.
For sharing, the Balkan Mezze offers a choice of three spreads with homemade somun bread, including ajvar and urnebes. The main event features Balkan staples like cevapi (wagyu beef kebabs) and sarma (slow-cooked sour cabbage rolls). The menu also includes a "Test Kitchen" section with seasonal experiments and sustainability-forward dishes, such as steak & eggs and a catch of the day.
