The Experience

Ynyshir’s dinner is not a menu you choose from. It is a fixed sequence of dishes, priced at £450 plus VAT per person, that the kitchen decides. No substitutions, no amendments – the experience runs as intended, and the restaurant states it is unsuitable for those with food allergies or dislikes. The meal includes music throughout and ends with a disco ball, making it as much a performance as a dinner.

The cooking here has earned two Michelin stars, a recognition of the precision and confidence required to deliver such a singular vision night after night. Guests sit either in the main restaurant (parties of one to four), at the highly sought-after front-row table for two, or at the Backstage Pass – a table for four set right inside the kitchen, the loudest and closest seat to the action.

The Setting

Ynyshir occupies a remote property in Eglwys Fach, near Machynlleth, on the west coast of Wales. Guests are encouraged to drive (the postcode SY20 8TA avoids confusion with a different village named Ynyshir two hours away). The nearest train station is six miles away, and taxis must be pre-booked. For the grandest arrival, small helicopters can land and stay overnight on the grounds.

The restaurant is open Tuesday through Friday only, and dinner begins promptly after pre-dinner drinks at 5pm. Overnight guests check in between 3pm and 4pm, stay in one of three room types – the House Room, the Studio (overlooking the grounds with an outdoor terrace, and the only dog-friendly option), or the Garden Room – and receive a light breakfast delivered to their room the next morning.

Practical Details

There is no dress code. All bookings are non-refundable, though reservations can be rescheduled with at least two weeks’ notice. The booking diary opens two months in advance, and a discretionary 12.5% service charge is added to the final bill. Children are welcome as long as they are prepared to experience the full menu; infants and babies are discouraged due to the music and atmosphere.

Ynyshir also offers the option to hire the entire property for weddings or private events. For those seeking a dinner that demands full trust in the kitchen, this is a rare and memorable destination.

The sense of almost mythological remoteness is accentuated as you head towards the west Wales coast, past the RSPB nature reserve, to the remarkable residence that is Ynyshir. Once owned by Queen Victoria, it has become one of the UK's foremost destination dining options thanks to Gareth Ward and his superlative kitchen and front-of-house teams. Ynyshir runs to its own agenda, with dozens of dishes over the space of four or five hours, requiring a level of concentration that will be amply rewarded with revelatory food rocking with stirring East Asian flavours, textures and temperatures. Bringing a singular atmosphere to the dark-walled dining room is a resident DJ, the now-famous glitterball and smoky theatrics from the embers of the evening's fire. There is a feeling that you might need to prepare for Ynyshir by forgoing solid sustenance for 48 hours, but our feedback files show how volubly people adore the novelty, the challenge and the sheer unadulterated fun of it all. And it is less relentless than it sounds: 'the tempo of the performance surges, then slackens and surges again, led by the music, and the fever-pitch deliciousness of some of the dishes,' our inspector noted. Wine picks are as original and as assertive as they need to be for the food, and are flexible enough to accommodate the gentler end of the spectrum.
