The story
Glynn Purnell opened Purnell’s in Birmingham in 2007 to showcase Modern British cooking through a distinctly personal lens. His kitchen treats invention and dry humour as essential ingredients rather than optional garnishes. He avoids traditional culinary jargon, replacing standard amuse-bouche with what he calls gifts from the kitchen. This approach shaped a seventeen year tenure that earned steady praise from The Good Food Guide before concluding with a final service in October 2024.
Dinner plates often reference childhood memories or regional favourites without losing technical precision. Guests encounter tomato and crème fraîche meringues paired with Exmoor caviar alongside a truffle flavoured pig sablé served with cheese custard. A later course might transform a classic breakfast into a poached egg yolk dish finished with garden peas and cider gastrique. Roast sirloin arrives with girolles and a touch of wasabi to bridge familiar comfort with unexpected heat across a Modern British table.
The spacious modern dining room provides ample space for conversations while staff move between tables with quiet efficiency. Team members maintain a polite and well informed presence that matches the relaxed pace of the kitchen. Evening guests can navigate the extensive cellar through a wine list formatted like a published book. Separate chapters guide diners toward team recommendations and Coravin preserved selections, rounding out a thoughtful Modern British programme.
