Briar in Bruton establishes a distinct voice for seasonal British cooking. Sam Lomas opened the venue in 2024 inside the Number One Bruton boutique hotel, reclaiming the former Osip space. He launched his first pop up at nine years old from his bedroom, naming it The Diced Carrot. Twenty-two years later that youthful experiment has evolved into a disciplined kitchen that reads the weather forecast and lunar cycles before writing the daily menu.
The hyper local approach relies on ingredients pulled directly from the on-site garden and surrounding woodlands. Dishes strip away unnecessary complexity to highlight raw quality, starting with porridge served alongside hand baked sourdough and house cultured butter. Savory options pair fresh cheese with roasted figs, toasted hazelnuts, and wild honey. Sweet finishes follow the same grounded logic, featuring Westcombe ricotta ice cream folded with sharp damsons.
Lomas designed the dining room to echo untamed English landscapes, mirroring the wild bramble shrub that inspired the restaurant name.
