At 16 Cook Street, in the heart of Liverpool, “8” By Andrew Sheridan offers a dining experience built on technical precision and creative flair. The kitchen is led by Chef Andrew Sheridan, whose bold, modern approach to British cuisine is matched by the quiet intensity of Head Chef Dan. Together, they shape every detail of the meal, from the first bite to the last petit four.
The dining room operates on a single seating, creating a sense of shared occasion. The menu is a tasting format – a series of carefully composed courses that change with the seasons and the market. Sample dishes include bream with wasabi and nam jim, asparagus with soda bread and smoked eel, beef tartare, and a chicken broth brightened with ginger and spring onion. Langoustine appears with Iow tomatoes, and spring lamb is paired with a Spanish rosé. The meal closes with passionfruit and coconut, then gariguette strawberry with sorrel and yoghurt, followed by petits fours.
A wine pairing is available at £85, selected to complement each course. For those who prefer a lighter option, a pescatarian tasting menu can be requested in advance. Vegetarian, vegan, gluten-free, and dairy-free diets are not accommodated, so it’s worth checking with guest services before booking.
The “8” Tasting Menu (£120) is offered Wednesday to Saturday evenings and Saturday lunch. The shorter “8” Lunch (£50) is served Thursday and Friday lunch, with a two-glass wine pairing for £20. All menus are sample guides; the actual dishes on the day of your visit may differ.
