The chef and the kitchen

Chef and co-owner Vusi Ndlovu approaches African cooking with a focus on fire and forgotten ingredients. He ranks among the top seven chefs from the San Pellegrino Young Chef finale in 2018 and helped found the African Culinary Library to preserve regional food culture. Working alongside management partner Absie Pantshwa, Vusi sources rare produce and breaks them down to their essential components. His kitchen uses smoke as a primary conduit for flavor, often finishing dishes with nothing more than Baleni salt and cracked black pepper. This method keeps the taste clean and potent, allowing the natural character of each ingredient to shine without heavy manipulation.

Signature plates and local flavors

The menu highlights the abundance of the African pantry through precise pairings. Diners encounter kingklip prepared with onion and bokkom, or duck served with sorghum and mustard. Vegetable-forward options include carrot with feta and masala, alongside leeks paired with shiitake and aged cheese. Ujeqe bread appears as a staple accompaniment, grounding meals in familiar tradition. Desserts shift toward global influences blended with local notes, such as peach with egusi and vanilla, or dark chocolate combined with orange and malt. Each plate reflects a commitment to celebrating the continent's diverse culinary heritage.
