Maray opened its doors on Bold Street in Liverpool during the summer of 2014, bringing a distinctly Middle Eastern approach to casual dining. The founders drew direct inspiration from the cultural tapestry of Le Marais in Paris, building the venue around a straightforward promise to serve honest food without cutting corners. You will find this ethos reflected in every plate, particularly in their commitment to preparing staples like labneh and falafel entirely by hand. That dedication to craftsmanship recently earned the Bold Street location a Local Gem designation from The Good Food Guide.

Standout dishes and seasonal menus

The lunch service leans heavily into Levantine mezze, offering plates like bhajis with red pepper dip and muhammara served with warm flatbread. Larger portions arrive throughout the day, featuring lamb shawarma paired with sweet potato mash and preserved lemon pesto. Guests often queue for the seven spice beef brisket, which sits alongside pickled carrot and minted barley. Even the Sunday roast menu rotates through seasonal vegetables such as salt baked beets and wild mushrooms coated in tahini.

The bar program matches the kitchen’s energy with bold cocktails and a carefully selected wine list designed to complement rich spices. Plant based options run deep across the board, from nut roasts with parsnip purée to chocolate and pistachio tarts finished with vanilla ice cream. They cut down on single use packaging by routing all tap water through on site filtration units.

There are currently two Marays in Liverpool, one at the Britannia Pavilion on Albert Dock and this outlet, at the top end of restaurant-heavy Bold Street. Sitting cheek-by-jowl with eateries of every complexion, it is dedicated to Levantine meze (labneh, houmous et al) and bigger traditional dishes (lamb shawarma, spiced lentil and rice majadara). There's a popular, good-value lunch too, while well-chosen cocktails and wines are a decent match for the food.
