The story
OXA, pronounced “Daise,” is the tasting-menu restaurant from chef Tony Parkin and Laura Parkin, part of the Open Restaurant Group. Set in a stylish, intimate neighbourhood space on Rose Mount in Oxton, Birkenhead, OXA has earned a Michelin Recommended distinction for its precise, ingredient-led cooking.
The experience is built around hyper-seasonal produce. Menus change four times a year—April, July, October, and January—with smaller micro-seasonal adjustments in between. Diners can choose between a Signature Tasting Menu and a Pescatarian Tasting Menu, both priced at £110. A shorter lunch and midweek menu is available at £75, and Sunday lunch is offered one Sunday per month.
Tony Parkin leads the kitchen, creating Modern British dishes that pair modern techniques with refined flavours. The Signature Menu, as seen on the restaurant’s site, opens with a cauliflower cheese and a Guinness and treacle bread with Winter Tarn butter. Courses move through a hot and sour broth with line-caught squid, hen of the woods with pine nuts and shio koji, an Orkney scallop with Iberico ham and jalapeño, and Herdwick lamb with aubergine and wild garlic. Desserts include a yoghurt sorbet with salted pecan and banana, and a yuzu course with Gariguette strawberry and purple shiso. An optional drink pairing menu, featuring fine wines and beverages, is available to complement the meal.
The restaurant describes itself as a “chef-led culinary journey brought to life by Tony and Laura,” set in a stylish, intimate neighbourhood setting. All guests dine at the same allocated time, with dinner service Wednesday through Friday at 7pm, and Saturday offering both lunch at 12:30pm and dinner at 7pm. The restaurant is closed Monday and Tuesday.
