The story
Hambleton Hall sits on a peninsula above Rutland Water, a Victorian country house that has been in the care of Tim and Stefa Hart for more than forty years. Its dining room has held a Michelin star continuously since 1982 – one of the longest such runs in the country – and the kitchen today, under head chef Aaron Patterson, delivers British classic cuisine rooted in the estate’s own walled garden.
The chefs draw daily on herbs, salad vegetables and soft fruit from the intensively cultivated kitchen garden. In summer, courgette flowers go straight from the soil to the plate. The Sunday lunch menu, available year-round, shows the style plainly: Hambleton’s traditional roast sirloin of beef with Yorkshire pudding, roast guinea fowl with hominy corn and charred sweetcorn risotto, or seared fillet of Skrei cod with baby violet artichokes. Desserts include a rhubarb crumble soufflé and the house tiramisu.
The kitchen team includes senior sous chef Beth, who appeared on MasterChef: The Professionals in 2024 after nine years at the Hall. Her presence reflects the stability and depth of the brigade.
The dining room leads onto a south-facing terrace with views over the lake. Beyond it, 17 acres of grounds include a parterre designed by Neil Hewertson in 1995, cork oaks and pines planted by Tim Hart, and secluded corners for reading or simply watching the light change over the water. The atmosphere inside is one of unhurried elegance – the sort of place where guests return to book their next stay before settling the bill, as general manager Graeme Matheson notes.
The wine list avoids the grandest names in favour of smaller producers and unexpected bottles, a policy that has earned multiple awards. Head sommelier Patrick Cooper, who trained at Hambleton fifteen years ago, works closely with the chefs to find precise food-and-wine matches. A rotating “Wines of the Moment” selection makes it easy to explore without wading through a long list, and a Coravin system keeps top bottles available by the glass.
