The story
Birch in Portree serves specialty coffee and locally sourced Highland brunch to a steady stream of morning visitors. Founder Niall Munro established the venue in 2020 after observing Melbourne’s café culture. The operation received a Local Gem rating in the 2026 Good Food Guide for its grounded approach to regional hospitality. Munro simply wanted to bring that same focused energy to the Isle of Skye.
Every specialty coffee order begins with beans sourced directly from growers, ensuring full transparency from farm to cup. The on-site roastery started operations in 2021 and processes shipments every Monday for Tuesday delivery. This small-batch method preserves the unique floral and fruity notes of single-origin lots. Guests can also purchase freshly ground bags alongside handcrafted ceramic vessels made by Cara Guthrie.
The island kitchen leans heavily on surrounding farms to complement the espresso bar. Mornings feature chia seed pudding served alongside thick slices of house-made sourdough. Toppings rotate between scrambled eggs with chorizo and lacto-fermented chilli, or charred asparagus paired with salsa verde and blue cheese. Non-coffee drinkers often order the smoked strawberry and lime iced tea instead.
The original Bayfield Road location maintains a clean aesthetic built around pale timber surfaces and minimalist shelving. Natural light floods the seating area during morning service. A newer branch near Inverness shifts toward an industrial direction with exposed brick walls and metal fixtures. Both spaces prioritize quiet conversation over crowded noise.
