Working from a 19th-century hunting lodge, Pierce limits ingredient counts to let high-quality produce shine, a technique sharpened during tenures at Gleneagles and Inverlochy Castle. His team prepares every element from scratch, including bread and sauces, drawing on a provenance list of local suppliers and their own vegetable garden.
Dinner guests follow a seven-course tasting menu that shifts according to seasonal availability and daily catch. The Good Food Guide highlights standout preparations such as a delicate chicken and egg sausage presented as a feather-light omelette with Madeira and truffle broth, alongside Isle of Gigha halibut finished with a saffron and Champagne emulsion. The property sits within thirty acres of landscaped grounds that slope down to a private cove on the Irish Sea. Formerly a hunting lodge visited by Winston Churchill and Dwight Eisenhower, the building retains panelled walls and open fireplaces while hosting an elegant dining room set with linen napery and china display cabinets. Guests seated by the window overlook the lawn and water, where views of Ireland are possible on clear days, complementing the meal with cool background music and informal service.
