The story
Perched on the whitewashed waterfront of Ullapool, The Dipping Lugger delivers refined Highland cooking that turns Loch Broom’s daily catch into precise, seasonal plates. Chef David Smith leads the kitchen while Robert Hicks welcomes guests through the dining room, shaping a five-course lunch or seven-course evening tasting menu around the local larder.
The building itself carries centuries of maritime stewardship. It began as a base for the British Fisheries Society in 1789 before Thomas Telford restructured it as a parish manse. That heritage translates directly onto the plate. Smith treats locally sourced proteins and coastal vegetables with restrained technique, allowing natural textures to drive each course rather than heavy sauces or theatrical plating.
Hand-dived scallops arrive crowned with bright roe, hollandaise, and grated lime zest to cut through their sweetness. Pan-fried cod follows with baked lemon, hand-rolled pasta, tiny shrimp, and toasted breadcrumbs for crunch. Sweet courses lean into layered confections like Caramelia, which blends chocolate and caramel across a brownie, parfait, blood orange sorbet, and coffee macaron. Even the bread service gets attention, arriving hot with salted butter resting on a smooth stone.
Diners face the loch and distant peaks while exploring a wine list split between land and sea. The selection highlights maritime-influenced grapes and includes skin-contact whites that carry peach and flint notes. Robert and Helen also pour spirits from their own micro-distillery, offering Seven Crofts, Fisherman’s Strength, or a herbal Ullapool gin to start the meal. The recent Good Food Guide recognition mirrors this consistent focus on regional produce and careful execution.
