The kitchen translates daily market finds into precise compositions. A recent tasting featured an artichoke heart filled with fresh crab salad and raw cream, finished with scattered fish roe. Sea bass medallions followed, resting in a bright yuzu vinaigrette alongside daikon radish and salmon roe. The main course presented turbot paired with flame-charred lobster meat and white asparagus, all bound by a buttery beurre blanc sauce that allows the natural sweetness of the seafood to shine.
Host Yasmin Weyn sources antique tableware and art objects from local flea markets to furnish the dining room.
