The story
O by Brush is an intimate chef’s counter tucked inside its parent restaurant, Brush Sushi, in Atlanta’s Buckhead Village. The experience is a 20-course tasting menu priced at $285 per person, with two seatings Wednesday through Sunday at 6 PM and 8 PM. Reservations are required.
The menu rotates seasonally and is described by the team as “artful, expressive, intentional, and innovative.” A signature technique here is dry-aging select fish—cleaned and aged in a specialized refrigerator for several days to deepen flavor and improve texture, elevating the sushi experience.
O by Brush is led by one Michelin-starred and James Beard–nominated Chef Jason Liang, who brings a distinctive perspective to Japanese cuisine. Born in the U.S. and raised in Taiwan, Chef Jason merges Edomae tradition with his Taiwanese-American heritage. The restaurant’s website notes that the omakase “harmoniously meets” these influences, creating a meal that feels both rooted in tradition and distinctly personal.
Guests can enhance the meal with a curated beverage pairing: a Wine and Sake option at $155 or a Premium pairing at $295, selected by the staff sommelier. For private events, O by Brush’s Private Dining Room accommodates up to ten guests with a minimum expenditure of $2,500 on food and beverages.
