The story
At Briscuits in Austin, Texas, the idea is simple and satisfying: take two of the South’s great pleasures – fluffy biscuits and slow-smoked barbecue – and serve them together. The operation lives inside Radio Coffee & Beer on Menchaca Road, a laid-back spot with outdoor seating and plenty of parking. The team rolls dough and smokes meat daily, and the results have earned serious attention.
The menu is built around biscuit plates and biscuit sandwiches. A one-meat plate comes with a third-pound of meat, a side, a biscuit with jelly, housemade pickles, and BBQ sauce. The two-meat plate doubles the meat and adds a side. For sandwiches, the Brisket & Jelly stands out – sliced brisket with smoked strawberry jelly. The Chopped Brisket sandwich is tossed in BBQ sauce with cheddar and pickles. Pulled Pork gets Carolina vinegar and pickled onion. There’s also a Blueberry Sausage & Jelly sandwich, using a house-made blueberry gouda sausage with smoked blueberry jam.
For breakfast-adjacent options, try the Brisket, Egg, & Cheddar or the Pulled Pork, Egg, & Cheddar. Bacon, Egg, & Cheddar and a vegetarian Tomato, Egg, & Cheddar round out the list.
Beyond sandwiches, Briscuits sells smoked meats by the half-pound – prime brisket sliced to order. Two house-made sausages are available by the link: a jalapeño cheese sausage (beef and pork with smoked jalapeños, cheddar, and gouda) and a blueberry sausage (blueberries, gouda, and thyme). Sides include pimento cheese grits, hashbrowns tossed in seasoned salt, soy-and-rice-vinegar marinated cucumbers, biscuit sticks with white gravy, and an inside-out cinnamon roll with smoked cream cheese frosting.
Briscuits has been named Best New ’Cue by Austin Monthly (2022), a Best New & Improved BBQ Joint by Texas Monthly (2023), and a Top 50 BBQ Joint in Texas (2025). In 2024, it received a Michelin Bib Gourmand, a nod to good quality, good value cooking. That accolade fits – the food is direct, well-made, and reasonably priced, with a clear point of view.
Whether you come for the BBQ, the biscuits, or both, Briscuits delivers a genuine taste of what makes Texas barbecue exciting. Just note the temporary summer hours: open Thursday through Saturday, 9am to 3pm, and items sell out.
