The story
Since 1979, Fogo de Chão has been dedicated to the culinary art of churrasco, a tradition rooted in the mountainous landscapes of Rio Grande do Sul, Brazil. The founders, who grew up on a traditional farm in the Serra Gaucha, learned this style of grilling from their family. Their passion for quality and respect for heritage led them to bring this experience to the global stage, and the Austin location on Congress Avenue is a proud part of that story.
At this Austin steakhouse, the experience is centered around the fire. Gaucho chefs expertly grill a variety of prime cuts on skewers, carving them tableside. The menu highlights signature cuts that define the Brazilian steakhouse tradition. The picanha, a prime part of the top sirloin, is lightly seasoned with rock salt and sliced thin for a robust, tender flavor. The fraldinha, or bottom sirloin, is carved against the grain to preserve its tenderness, while the costela—beef ribs—are grilled for several hours to bring forward their natural flavors. For those seeking something exceptional, enhancements include a Wagyu Ancho (ribeye) and a Dry-Aged Tomahawk Ancho, both aged for a minimum of 21 days.
Beyond the meats, the experience includes the fresh and vibrant Market Table, featuring seasonal selections and authentic Brazilian side dishes. The Bar Fogo concept offers Brazilian-inspired small plates and cocktails, including the classic caipirinha.
The restaurant’s commitment to quality has earned it a Wine Spectator Award of Excellence for 2023, a testament to its carefully curated wine list that complements the robust flavors of the churrasco. The atmosphere in the Austin location is designed for both lively gatherings and refined dining, with options for outdoor seating, private parties, and even a chef's table. Whether you are visiting for lunch or dinner, the warmth of the fire and the skill of the gaucho chefs create a dining experience that is both authentic and memorable.
