The story
Since 1979, Fogo de Chão has kept the flames of the culinary art of Churrasco burning. At its Bellevue outpost on Bellevue Way, the restaurant brings the full churrasco experience to the Pacific Northwest. Gaucho chefs carve fire-roasted meats tableside—Picanha, Fraldinha, and signature cuts—while the Market Table offers a fresh, vibrant spread of seasonal vegetables, salads, and artisan cheeses. The experience is complemented by Bar Fogo, where Brazilian-inspired small plates and craft cocktails, such as the classic Caipirinha, are served.
The founders grew up on a traditional Southern Brazilian farm in the Serra Gaucha, learning the churrasco grilling tradition that became the backbone of the restaurant. Their first wood-structure restaurant in Porto Alegre grew out of an obsessive dedication to quality and a respect for family heritage. After gaining a reputation among politicians and celebrities, they expanded to São Paulo and eventually to the U.S., debuting in Dallas and later opening a flagship in New York City. Today, Bellevue diners can taste that same heritage—the fire, the cuts, the energy.
Fogo de Chão Bellevue has earned a Wine Spectator Award of Excellence, reflecting a thoughtfully curated wine list that complements the rich, smoky flavors of the churrasco. The Founders Tribute Wine Collection, including the Jorjão Reserva Malbec and Eulila Red Blend, is designed to pair with specific cuts—from the lean Picanha to the robust Wagyu New York Strip. The restaurant also hosts special wine dinners, like the recent VIK Wine Dinner featuring a 100-point vintage paired with a chef-curated menu.
