matū in Beverly Hills is a steakhouse that reimagines what a steak dinner can be. The restaurant exclusively serves 100% grass-fed Wagyu from First Light Farms of New Zealand, a choice rooted in founder Jerry Greenberg’s decades-long pursuit of the perfect bite. The name matū is a Māori word meaning “essence, the gist of the matter, richness” — and it captures the restaurant’s focus on the pure, natural flavor of exceptional beef.
Greenberg’s path to matū began after a honeymoon meal in the South of France that reset his understanding of steak. Over 20 years, he experimented in his kitchen, traveled to New Zealand, Japan, and Argentina, and eventually discovered that grass-fed Wagyu — combining Wagyu genetics with a diet of only grass — produced meat with exceptional levels of heart-healthy Omega 3s, lower saturated fats, and a naturally beefy flavor that required no dry-aging. The result is steak that is “warm red” at the center: luscious, tender, and full of richness.
In a nod to Wagyu’s Japanese lineage, matū offers composed dinners that function as a steak Omakase, showcasing various cuts prepared in different methods.
