The story
Since opening its doors in July 2012, Bramble & Hare has been the kind of place where the line between fine dining and a welcoming farmhouse blurs. Founded by Jill and Chef Eric Skokan as the sister restaurant to their Black Cat, this bistro draws its name from two sources: the 1883 farmstead, Bramble Hill, and the cleverness of the Paris cabaret in Steve Martin’s play Picasso at Lapin Agile.
The heart of the restaurant is the Skokans’ own certified organic farm. The huge variety of meats and produce grown there gives Chef Skokan a limitless palette of flavors, colors, and textures. The team also forages wild mushrooms, juniper, and wild plums, rooting the cooking in the Front Range region. The result is American cuisine that changes daily, always with a sense of discovery.
Bramble & Hare features a three-course prix fixe menu, craft cocktails, and heritage Mulefoot pork. Everything is made in-house, from charcuterie to liquors to desserts. The atmosphere is casual vintage – warm and unhurried, with a piano in the dining room and an outdoor patio.
The Michelin Guide has recognized this commitment with both a Recommended distinction and a Green Star, honoring the restaurant’s extreme dedication to sustainability. It’s a place where the farm freshness and thoughtful hospitality feel effortless, yet the cooking is anything but simple.
