The story
Ever is the creative obsession of world-renowned chef Curtis Duffy. Located in Chicago’s Fulton Market district, the restaurant offers an 8- to 10-course tasting menu that changes with the seasons, focusing on proteins from land and sea alongside seasonal vegetables complemented by fruits, grains, seeds, and nuts. The dining experience typically lasts two to two and a half hours, set in an exquisite atmosphere with extraordinary service.
Chef Duffy’s path to culinary greatness is chronicled in the documentary For Grace. He earned three Michelin stars at his previous restaurant, Grace, and Ever has been awarded two Michelin stars in the 2021 through 2025 guides. The kitchen is led by Chef de Cuisine Lucas Trahan, who worked alongside Duffy at Grace before returning to Ever.
The menu is a single tasting menu that evolves frequently. Carefully curated wine pairings can be added for an additional cost, and the bar also offers wines by the bottle and glass, classic cocktails, and a limited beer selection. Because of the complexity of the menu, substitutions for food aversions are not possible, though certain dietary restrictions can be accommodated with at least 72 hours’ notice.
Ever is part of a larger hospitality group that includes After, a come-as-you-are bar next door with unmatched cocktails and a laid-back spirit, and The Canvas by Ever, a high-end event space. The restaurant itself seats approximately 75 guests, including a private dining room for up to 12. This modern cuisine destination continues to earn national acclaim, including a AAA Five Diamond rating and recognition from Esquire and Chicago Magazine as one of the best new restaurants in America.
