The Tradition

Since 1979, Fogo de Chão has kept the flames of churrasco burning. The founders grew up on a traditional farm in the mountainous Serra Gaucha region of Southern Brazil, where they learned to cook over open fire. After formal training as churrasqueiros, they opened their first restaurant—a wood structure in the countryside of Porto Alegre. Word spread among politicians, businessmen, and celebrities, leading to a second location in São Paulo. By 1997, loyal American guests prompted a stateside debut in Dallas. Today, the Chicago River North outpost at 661 N. LaSalle Boulevard carries that same dedication to the craft.

The Churrasco Experience

At Fogo de Chão, the meal is a continuous parade of fire-roasted meats carved tableside by gaucho chefs. The signature cut is picanha—prime part of the top sirloin, lightly seasoned with rock salt and sliced thin. Filet mignon, bone-in ribeye (ancho), bacon-wrapped medalhões, bottom sirloin fraldinha, and beef ribs slow-grilled for hours all make regular appearances. For those seeking something extra, enhancements like Wagyu ancho, Wagyu New York strip, or a dry-aged tomahawk ancho are available. The menu also features chicken, lamb, pork, and seafood, alongside a seasonal Market Table with fresh vegetables, salads, and authentic Brazilian sides. Bar Fogo offers Brazilian-inspired small plates and cocktails.

Wine Recognition

The restaurant’s wine program has earned a Wine Spectator Award of Excellence since 2003, reflecting a thoughtful selection that complements the robust flavors of churrasco. Pair a big Napa Cabernet or a Chilean favorite like Don Melchor with the grilled meats.
